banana muffins

yesterday i headed over to an old coworker's house.

she and i worked together (split an english class and made our exams together) for a year an a half before she quit. before she quit, she got married and then last summer she had a wedding and announced that she was pregnant. her son is now almost two months old and the recipient of this bag.

and i took with me:

heart shaped mini banana muffins!!



(i couldn't wait to taste them before taking a photo...)



banana muffins

1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1/2 c. sugar

1 egg
1/3 c. margarine
3 bananas
a splash of vanilla


mix wet ingredients (smashing bananas with a fork first helps)
then add to dry ingredients.
bake at 170°C for 15 minutes.


the only ingredient that may be a little bit difficult to find in japan is baking soda (or am i just not looking in the right places?). i found some at a random "international" store in omiya a long time ago, and have a HUGE bag from costco that i don't think i could use up if i tried. otherwise, everything is easy-to-find stuff. (finding stuff is half the battle for me in japan)

also, i used a silicone muffin "tin," which i highly recommend: you don't need muffin cups and the muffins pop right out. plus, it's super easy to clean.

i made some "regular" sized ones too (baked for 19 minutes, upon using the toothpick test), but only filled the cups part way so they didn't puff up and over like classic muffins, but they were just as delicious.

and i just finished the last one.

iishi-seijo is where i buy mine - the shop in omiya! there is seijo in a lot of the other stations, you just need to hunt one down, you do live in tokyo so you can't be that far away from one!

update on the labels, they have come out great, I like them much more than the shiny ones and it doesn't matter if i accidently iron it when i am pressing the the thing i have sewn the label onto.

i can't read the packaging so i will have to ask hubby or take a photo for you!

baking powder is easy, you can find it most places...

baking soda is used as a vegetable wash. look next to the dish soap.

ooh, i didn't realize i needed to be careful about accidentally re-ironing the label. will be careful! but, will also check tokyu-hands. like at the fabric store, even if i don't know the name of it, as long as i can describe it! haha...thanks!!

yeah, i've never had any trouble finding baking powder. actually, i've got so much baking soda (over 5kilos! thanks to costco) i won't be needing to buy anymore for a long time, but for anyone in japan needing baking soda, thanks for the tip! :)

baking soda is easy enough to find. i forgot the japanese name for it, though! i can usually find a box in the 'baking' section of any supermarket. inoue is a common brand i see around here.

i got a box of arm and hammer from kaldi coffee, though. LOL

i use the big size from costco for laundry, for the most part.
