cooking kick

i have been on kind of a cooking kick for awhile now it seems. while i can't claim to be a great cook, i do enjoy cooking and am working on expanding my repertoire. (recipes always welcome!) i also make it a habit to make more than enough so i have leftovers for my lunch the next day. here's what's been cooking:

monday

chicken stuffed green peppers (served with cheesy bread from the landlady)

tuesday
bacon rolled asparagus, green beans, salad with carrots, cucumbers and homemade avocado honey dressing:


both of the peppers and the asparagus were "experiments" but they turned out quite well, actually. otherwise, dinner tonight was basically a VEGETABLE meal. i had six stalks of asparagus, a bunch of green beans, a quarter head of lettuce, a whole cucumber, a whole carrot, and the top of an avacado. yum, i love vegetables.
